heres a great post workout meal idea you can prep ahead of time and just keep it in the fridge until your ready to eat then just toss it in the microwave or oven to heat it back up
what you need
400g baby potatoes cut in half
olive oil spray
salt and pepper to taste
250g skinless chicken breast
1 tsp dried basil
half a red onion sliced thin
2 cups baby spinach
30g crumbled feta - totally optional but good
for the dressing:
2 tbs red wine or apple cider vinegar
1 tbs olive oil
2 tsp wholegrain mustard
how to make it
get the oven going at 430 degrees and heat up your grill or a pan on the stove. put the potatoes on a baking sheet with some parchment paper then spray them with oil and season with salt and pepper before roasting for about 25-30 mins until their tender
while those are cooking pat the chicken dry and season it with salt pepper and that basil. cook it on the grill for maybe 12-15 mins flipping once so its done all the way through then let it sit for a minute before you slice it up. mix your dressing ingredients in a little bowl and add some salt and pepper there too
when the potatoes are done and still hot throw them in a big bowl with the onions spinach and half the dressing and give it a good toss. put the potato mix in your bowls then top with the chicken and the rest of the dressing and the feta if your using it
